The Raw is a seafood-focused fine dining restaurant in Geelong, Victoria. We are seeking a passionate and experienced chef to join our kitchen team full-time. The ideal candidate will have a background in fine dining, strong seafood knowledge, and a commitment to excellence in every detail. This role requires a commitment to precision, creativity, and sustainability, as well as a genuine passion for seafood.
Key Duties and Responsibilities
Oversee daily kitchen operations, ensuring smooth service and exceptional food quality.
Prepare, cook, and plate dishes to fine dining standards, focusing on seafood and seasonal produce.
Handle and store seafood with the highest standards of hygiene, freshness, and sustainability.
Conduct seafood butchery, sashimi preparation, and shellfish cleaning with expert technique.
Collaborate with other Chefs to develop and execute seasonal and tasting menus.
Monitor kitchen inventory, manage ordering, and control food costs effectively.
Supervise and train junior chefs and kitchen staff in fine dining preparation and service.
Ensure compliance with food safety, and workplace health regulations.
Maintain kitchen cleanliness, organisation, and equipment care at all times.
Communicate effectively with the front-of-house team to deliver a seamless guest experience.
Requirements
Minimum 2-3 years’ experience in a seafood restaurant or high-end modern Australian/Asian restaurant or relevant experience.
Strong seafood handling, preparation, and presentation skills.
Knowledge of local and international cuisine and contemporary plating and flavour techniques.
Excellent time management, attention to detail, and leadership ability.
Certificate IV in Commercial Cookery or equivalent qualification.
Flexibility to work evenings, weekends, and public holidays.
