Phillip Island has much to offer for lifestyle, its people and the opportunities presented with a large number of national and international events, a track racing circuit, penguin tours, wineries & surfing competitions. We are seeking a qualified experienced Chef who wishes to move here. We want to hear from people who have the drive and passion for not only food, but hospitality and team development. Multiple positions available, who can start ASAP.
Duties will include but are not limited to:
* Cooking quality food in our 250 seat venue
* Responsibility for receipt and examination of goods/supplies to ensure quality and quantity standards and specifications are met
* Liaise with kitchen staff, and assist where necessary to ensure efficient expedition from kitchen to dining area
* Maintain basic food cost control standards. Liaise with the Head Chef regarding shortages/usages
* Collaborate with peers to plan and develop recipes and menus, considering factors such as seasonal availability of ingredients, the likely number of customers, portion size and final menu price
* Execute menu items from start to finish. This including but not limited to preparation of ingredients, butchery of proteins, cooking and plating of menu items
* Ensure proper food handling procedures are followed for wrapping, labelling, dating, stocking, storing, rotating and checking temperature of products
* Get creative and putting forward menu ideas for our seasonally changing menu.

* Be able to deal with and resolve conflict that may arise with both customers and staff

A flexible roster - Phillip Island is seasonally busy (Mid December to Mid April), in the quieter months, Full-time employees are able to have more time off, go on leave etc. Excluding Moto GP week.
4 day work week in winter (depending on Chef availability)
