Tom's Providore & Wine Bar is an established venue on Beaufort Street, on the city fringe, seeking an experienced chef to join its close-knit team. Tom’s is a gourmet providore, wine bar and, wine and liquor store with its core activity being the provision of on-premise food and beverage. Tom’s menu offers classic Mediterranean and European cuisine.
The successful candidate will be responsible for managing the daily operations of the back of house team members and area, implementing production processes, managing food and labour costs and have an overall understanding of hygiene and food safety. Core responsibilities include, but are not limited to:
Leadership: providing leadership in culinary production, operations and procurement including recruiting, training and mentoring team members
Operations:
General - Evaluating procedures and policies to ensure efficient and effective back of house operations
Menu - planning and executing menu for daily food service operation
Food preparation - demonstrating cooking techniques; advising on cooking procedures; preparing and cooking food (signature dishes)
Hygiene & food safety - ensuring kitchen area is maintained to highest standards of hygiene and cleanliness including directing, implementing and complying with food hygiene and health & safety programs
Inventory & cost controls - managing vendors; purchasing and maintaining inventory of food items and supplies including managing budgets and food cost controls
Quality: identifying and implementing continuous quality improvement procedures relating to food preparation, presentation and service
Employee development & management: recruiting, managing and developing kitchen team members through appropriate coaching, training and mentoring
You will require a minimum of 3 years’ experience in a similar role and must be proficient in preparing and cooking a variety of Mediterranean and Western European (Italian, French and Spanish) cuisines.
You will need to demonstrate your experience and versatility including your ability to maintain consistency in product and performance across varying conditions.
A certificate in commercial cookery is preferred, however, proven cooking skills in a fast-paced, high volume environment will be favourably considered.

be available to work around 12 hour days (split shifts), 5 days a week including weekends and public holidays.
