A full-time Head Chef (Specialist Curry and Tandoori Chef) position is available at Embers Fusion Indian Restaurant, located in Shellharbour City Centre, NSW. The successful applicant must have a minimum of 2–3 years’ experience in Indian cuisine and hold relevant commercial cookery qualifications. An attractive salary package of $75,000–$85,000 per annum (depending on experience) will be offered to the suitable candidate.
Key Responsibilities
Lead and manage all kitchen operations, ensuring smooth and efficient service.
Prepare and cook authentic Indian curries, tandoori dishes, biryanis, breads, and specialty items to high standards.
Oversee and operate the tandoor section, ensuring proper marination, temperature control, and cooking techniques.
Develop, standardize, and update recipes to maintain consistency in taste, quality, and presentation.
Plan menus, introduce seasonal specials, and contribute to new dish development.
Supervise, train, and guide kitchen staff to maintain performance and productivity.
Monitor food quality, portion control, and minimize wastage.
Manage stock levels, order supplies, and ensure proper inventory rotation.
Ensure compliance with Food Safety, HACCP, and WHS/OHS regulations.
Maintain cleanliness, hygiene, and organization across all kitchen areas.
Handle busy service periods efficiently while maintaining high culinary standards.
Skills & Experience Required
Certificate III or IV in Commercial Cookery (or equivalent qualification)
Minimum 2-3 years of experience as a chef specializing in Indian cuisine
Strong knowledge of Indian spices, gravies, marinades, and tandoor cooking techniques
Experience in preparing both vegetarian and non-vegetarian Indian dishes
Good understanding of kitchen operations, food safety, and hygiene practices
Ability to work in a team and handle busy service periods
Passion for cooking and attention to detail
