Key Responsibilities:
Prepare and cook traditional Hyderabadi Dum Biryani using authentic methods.
Specialise in Deccan-style dishes such as Haleem, Marag (meat soup), and slow-cooked curries.
Operate and manage tandoor for items like Chicken Tikka, Naan, and Rumali Roti.
Maintain food safety, hygiene, and quality standards at all times.
Assist in menu development and train junior kitchen staff.
Essential Criteria:
Minimum 1 years or more full-time experience in an Indian commercial kitchen, with demonstrated skills in Hyderabadi and Deccan cooking techniques.
Proven experience with Dum cooking methods, especially for biryani.
Strong knowledge of tandoor operations, breads, and kebabs.
Must be reliable, organized, and able to work in a fast-paced kitchen.
Desirable:
Relevant qualification in Commercial Cookery (Certificate III or equivalent).
Understanding of dietary restrictions and allergens in Indian cuisine.
