Maestro Hospitality is a Sydney-based restaurant group founded by Michelin-trained chef Alessandro Pavoni, specialising in authentic yet contemporary Italian dining. The company operates a diverse portfolio of venues, from fine dining restaurants like Ormeggio and a’Mare to casual trattorias and seaside bars, while also offering consulting services in menu design, operations, and venue launches. With a strong focus on both cuisine and service, Maestro Hospitality combines centralised support functions (marketing, HR, finance) with hands-on culinary expertise to deliver consistency and scale. Positioned in prime Sydney locations, the group enjoys a strong reputation but must navigate challenges such as high competition, cost pressures, and evolving consumer trends.
