Flow Management: Strategically oversee daily opening and closing, floor plan, reservations, and service timing, particularly during peak coastal holiday periods.
Ambience: Maintain the venue's distinctive blend of modern design and comfortable Italian style. Ensure impeccable cleanliness, appropriate music, and lighting that complements the Coolangatta setting from daytime lunch through evening dining.
Team Leadership and Culture
Recruitment and Development: Recruit, hire, train, and mentor all FOH personnel (servers, hosts, bartenders), focusing on product knowledge (menu, wine, cocktails) and service standards.
Experience Requirements: Minimum 3-5 years restaurant management experience required.
Coastal Culture: Cultivate a positive, energetic, and professional work environment. Manage scheduling, conflict resolution, and performance development for staff.
Product Knowledge: Ensure staff are experts not only in the Italian menu, but also in the cocktail and beverage program, facilitating confident recommendations and upsells.
Financial and Administrative Oversight
Profit and Cost Control: Directly manage operational expenses, labor costs, and stock levels (food and beverage) to achieve targeted profit margins.
Inventory & Procurement: Oversee FOH inventory management and ordering, including bar supplies and linen, working collaboratively with the Head Chef on overall venue costs.
Compliance: Ensure absolute compliance with all Queensland health regulations, RSA (Responsible Service of Alcohol) requirements, and local council licensing standards.
Work Authorisation: Visa sponsorship available for suitable candidates.
Certification Requirements: Current RSA certification must be held before commencing employment.
POS and Reporting: Handle daily cash management, reconciliation, and detailed sales reporting through the Point-of-Sale (POS) system.
System Training: Comprehensive training will be provided on our Point-of-Sale system.
Culinary and Beverage Focus
Food Quality: Partner with the Kitchen team to ensure every dish meets the high standards of presentation and authenticity expected of Baskk Italian.
Beverage Program: Take ownership of the Italian wine list and the contemporary cocktail program, managing stock, ensuring proper staff training, and driving profitable beverage sales.
Beverage Management Experience: Full beverage management experience required, including wine programme and cocktail operations.
