Job Description
Reporting directly to the Executive Chef, the Sous Chef will play a critical leadership role in managing day-to-day kitchen operations. The position oversees multiple service styles including conferencing and banqueting, à la carte dining, breakfast buffet service and hotel guest dining. This role requires a confident and hands-on leader who can drive standards, support the kitchen brigade and ensure the smooth delivery of all services.
Key responsibilities include:
Leading daily kitchen operations and supervising chefs across multiple outlets
Managing banqueting service and conference-style menu execution
Supporting rostering, ordering, menu development and food safety compliance
Guiding and developing Chef de Parties, Demi Chefs, Commis Chefs and stewarding teams
Stepping into leadership of the kitchen in the absence of the Executive Chef
Candidate Profile
The ideal candidate will be a well-rounded Sous Chef with strong hotel or large-scale hospitality experience. They will bring a calm leadership presence and the ability to thrive in a fast-paced environment delivering multiple service styles.
Key attributes include:
Previous experience within hotel or large venue kitchen operations
Strong background in banqueting and conference-style menu execution
Proven leadership managing kitchen brigades across multiple services
Experience with rostering, ordering and kitchen administration

This role offers the opportunity to join a dynamic hotel environment with genuine progression potential into senior kitchen leadership. The successful candidate will receive a salary between $80,000 and $90,000 plus superannuation, with potential performance incentives. Relocation support and temporary on-site accommodation may be available for the right candidate, and visa sponsorship can be considered.
