THE ROLE
We are seeking an accomplished and driven Sous Chef to take a pivotal leadership role in our kitchen. Reporting directly to the Head Chef, you will be a key part of our culinary output — leading the brigade through daily service, mentoring junior chefs, and upholding the exceptional standards our guests expect.

YOUR RESPONSIBILITIES
Lead and manage the kitchen brigade in partnership with the Head Chef, driving a culture of excellence and accountability
Assist in menu development and seasonal recipe creation, contributing culinary vision and creative flair
Mentor and develop junior chefs and CDP-level staff, fostering skills and professional growth
Manage kitchen operations in the Head Chef's absence, including labour, ordering, and stock control
Maintain rigorous food safety, hygiene, and HACCP compliance across the entire kitchen
Collaborate with Front of House leadership to ensure seamless, guest-focused service delivery
Contribute to cost management, minimising waste while maintaining the highest ingredient quality
ABOUT YOU
Proven experience as a Junior Sous or Sous Chef in a fine dining quality restaurant environment
A natural leader with strong interpersonal and communication skills — you inspire those around you
Exceptional organisational ability and composure under pressure during fast-paced service
A genuine passion for food, seasonal produce, and staying across current culinary trends
Creative flair with the technical foundation to execute your ideas at the highest level
Meticulous attention to detail in both taste and presentation
High standards of personal presentation and a professional, team-first attitude
Sound knowledge of food safety legislation and kitchen best practices
