Yaki Jin is hiring for a sushi chef/ senior sous chef that is comfortable with creating recipes, processes and working in a fast paced environment.
The ideal applicant is an ambitious chef with at least 5 years experience with Japanese cuisine.
Candidates with 3+ years of Japanese cuisine experience will also be considered based on demonstrated skills and passion for the role.
The successful applicant will have the opportunity to develop further within the business. We offer flexible work arrangements but will require work for 5 days a week for full time staff.
Key responsibilities will include but are not limited to:
Managing kitchen service operations
Managing central kitchen preparation operations
Assisting with recipes for new menu designs and costing
Managing operating targets and KPIs
Managing relationships with existing suppliers and sourcing new suppliers
Basic requirements:
Maintenance of standard Food Safety Requirements
Valid food safety certification (Food Handler Certificate, Food Safety Supervisor, HACCP Certificate, or any recognised equivalent certification)
Understand how to prepare sushi rice, sushi rolls, sashimi and nigiri sushi
Understand how to trim and portion cuts of beef, chicken and pork
A deep understanding of Japanese flavours and ingredients
A scrupulous attention to detail
Intermediate level English fluency for effective communication in a fast-paced kitchen environment
Valid working rights
Vehicle or able to commute
