We are proudly part of IKI Dining Group, a Sydney-based hospitality group that currently owns and operates 5 venues, with plans to double our store count this year. Our group is built on delivering Michelin-level quality at everyday accessibility, supported by strong systems, training, and culture.
We are now seeking an experienced Sushi Chef to join our growing team.
About the Role
You will be responsible for preparing and presenting sushi and sashimi to a high standard, supporting daily service across sushi train and omakase operations, and maintaining excellent kitchen hygiene and organisation.
Key Responsibilities:
Prepare nigiri, sashimi, rolls, and sushi train items to brand standards
Support omakase and special service when required
Maintain food quality, consistency, and presentation
Follow prep lists, recipes, and portion controls
Ensure cleanliness, HACCP, and food safety compliance
Assist with stock rotation, prep, and waste management
Work collaboratively with kitchen and FOH teams
About You
Minimum 2 years’ experience as a Sushi Chef or Sushi Cook
Strong knife skills and knowledge of Japanese ingredients
Passion for quality, detail, and craftsmanship
Comfortable in a fast-paced service environment
Reliable, punctual, and team-oriented
Food safety certification preferred
