One of our clients, a fine dining bar & restaurant in Melbourne is seeking experienced Head Chef and Sous Chef to lead and support our kitchen team, specialising in modern Greek, Italian, Australian, Indian & Mediterranean cuisine.

These are full-time positions.
Key Duties & Responsibilities (Head Chef & Sous Chef):
Plan, develop and cost seasonal Australian & Mediterranean menus
Ensure all food is prepared to venue standards, specifications and timeframes
Cook and supervise the preparation of all menu items during service
Be highly proficient on the grill, especially with steaks and premium cuts
Lead, supervise and coordinate cooks and kitchen staff
Prepare dishes to accommodate different dietary needs (GF, vegan, vegetarian, allergies)
Select high-quality ingredients to deliver outstanding flavour and presentation
Analyse recipes and assist in pricing menu items based on food, labour and overhead costs
Maintain consistent portion sizes and quality control across all sections
Manage stock levels, ordering and receiving of raw materials and supplies
Minimise wastage through careful planning, storage and rotation
Uphold the highest standards of kitchen hygiene, food safety and OH&S at all times
Train, mentor and delegate tasks to kitchen staff according to service requirements
