Layers Bakery in Subiaco WA is a well-established artisan bakery known for high quality pastries, breads and viennoiseries. With strong customer demand and continued growth, we will be expanding our operations by the end of the year.
Currently operating 5 days per week, we will soon transition to a 7-day trading, increasing our production volume and product range.
We are seeking a skilled Baker with a passion for artisan baking techniques and laminated dough to join our team on a full time basis.
You will be responsible for daily production in a fast-paced, quality driven environment, including:
- A strong understanding of sourdough baking
- Mixing, scaling and baking a variety of artisan sourdough breads, pies & baked goods
- Laminating different types of dough and producing viennoiserie
- Managing fermentation and proofing processes
- Maintaining consistency, quality and presentation standards
- Operating and maintaining dough sheeters, deck ovens, rational ovens and other baking equipment
- Working in early morning shifts as required
- Ensuring food safety and hygiene standards are met
Requirements:
Certificate III in Baking (or overseas equivalent)
Minimum of 2 years experience as a Baker
Strong knowledge of sourdough bread production, fermentation & hand molding
Strong understanding of traditional baking methods
Proven experience working with laminated doughs
Ability to work efficiently in a high volume environment
Team player with good communication skills
Be punctual, reliable and have good organization skills

Salary range is $77,000 to $82,000 per year + superannuation (depending on experience)
