About the role

We are seeking an experienced Sous Chef to join our kitchen team at The Seahorse Inn Hotel. This is a full-time position based in Eden, NSW. As Sous Chef, you will play a crucial role in supporting the head Chef and ensuring the smooth, efficient operation of our kitchen. You will be responsible for maintaining our high culinary standards, managing food preparation, and leading kitchen staff to deliver exceptional dining experiences for our guests. This is an integral position that directly impacts the quality of our food service and the overall reputation of our establishment.

Key responsibilities

• Assist the head Chef in planning menus and ensuring consistency in food preparation and presentation
• Oversee daily kitchen operations, including food preparation, cooking, and plating of dishes
• Supervise and train kitchen staff, ensuring adherence to food safety and hygiene standards
• Manage inventory, monitor stock levels, and report on food wastage and costs
• Maintain strict adherence to food safety protocols and health regulations
• Quality assure all dishes before they leave the kitchen, ensuring they meet our high standards
• Step in for the head Chef when required and manage the kitchen during their absence
• Contribute to the development of new dishes and seasonal menus in collaboration with the Executive Chef
• Maintain kitchen equipment and ensure a clean, organised working environment
• Liaise with front-of-house staff to ensure smooth service delivery

What we're looking for

• Proven experience as a Sous Chef or Senior Chef in a busy hospitality environment, minimum 2 years' experience required
• Strong culinary skills with expertise in a range of cooking techniques and cuisines
• In-depth knowledge of food safety, hygiene standards and HACCP principles, valid NSW food safety certificate required
• Excellent leadership and team management abilities with the capacity to motivate and develop staff
• Strong organisational and time management skills with the ability to work under pressure
• Proficiency in kitchen management systems and stock control
• Relevant culinary qualifications or apprenticeship training. Minimum cert 3 in professional cookery or similar
• Current food handling certificate, valid NSW food safety certificate required

• Excellent communication skills and a collaborative approach to working with colleagues
• Passion for food quality and a commitment to continuous improvement
