We're growing. The menu's evolving. And now we're looking for the right second-in-command to help us take it up a notch.
The Role
We're on the hunt for a talented, driven Sous Chef to work alongside our Head Chef in leading The 383 kitchen.
This isn't a title role. You'll be genuinely hands-on — on the pass, on the grill, building a team culture that's as tight as a good demi-glace.
Your key responsibilities will include:
Assisting the Head Chef in the day-to-day management of kitchen operations
Supervising, training and mentoring kitchen staff
Preparing and cooking menu items to a consistent, high standard
Contributing to menu development and seasonal specials
Managing mise en place, food prep, and service readiness
Overseeing food safety, hygiene and HACCP compliance
Assisting with ordering, stock management and waste minimisation
Stepping up as acting Head Chef in their absence
Maintaining a positive, high-performance kitchen culture
About You
You bring the heat (literally and figuratively). You're someone who:
Holds a relevant trade qualification (Certificate III or IV in Commercial Cookery, or equivalent)
Has minimum 2 years' experience as a Sous Chef or Senior Chef de Partie in a comparable venue
Has solid experience across multiple sections — you don't just own the fryer
Leads with patience and commands respect through skill, not volume
Understands the pace of a busy service and stays cool when it counts
Has genuine knowledge of food safety legislation and HACCP principles
Can contribute creatively to menus with an eye on cost, consistency and guest experience
Is ready to plant some roots — this is a full-time, long-term opportunity in a genuinely stunning part of the world
