Launch one of Bondi Beach’s most exciting new restaurant openings.
Chotto Matte is a globally recognised Japanese–Peruvian fusion restaurant group, with venues in London, Manchester, San Francisco, Toronto, Doha and Riyadh, and now launching in Sydney.
Our venues bring together bold Nikkei cuisine, immersive interiors, music, art and energy to create a dining experience that feels vibrant, premium and unforgettable.
We're building our opening kitchen team and are looking for skilled Sushi Chefs de Partie who want to be part of something new from day one.
The Role
As Sushi Chef de Partie, you'll run your section with precision and pride, working with premium seafood and produce to deliver Chotto Matte's signature sushi, sashimi and Nikkei dishes. You'll:
Take ownership of your section, from mise en place through to service, maintaining consistently high standards of preparation and presentation.
Work closely with the Head Chef and Sous Chefs to execute the menu and help shape the kitchen during our launch.
Guide and support junior chefs, setting the tone for a collaborative, respectful kitchen culture.
Manage stock, minimise waste and contribute to the kitchen's cost and quality targets.
Follow food safety, hygiene and WHS requirements at all times.
About You
Proven experience as a Sushi Chef de Partie or in an equivalent role in a professional kitchen.
Strong knife skills and a solid understanding of traditional sushi technique, with curiosity about Nikkei and fusion flavours.
Calm and organised under pressure in a high-volume, fast-paced environment.
A team player with clear communication and a positive, can-do attitude.
Reliable, self-motivated and open to feedback and learning.
Experience in premium, hatted or high-energy restaurant settings is highly regarded.
Pre-opening experience is a bonus.
About You
Across all roles, we’re looking for people who share the same qualities:
Passion for food and hospitality
Strong work ethic and reliability
Pride in quality and consistency
Positive attitude and willingness to contribute to the team
Strong communication skills
Ability to work calmly during busy services
Good understanding of food safety and hygiene
Attention to detail
Desire to learn, develop and improve
Previous experience in Japanese, Peruvian, Nikkei or premium-fine dining kitchens will be highly regarded for the role.
